Subtle cosy lighting, minimalistic décor and elegant seating all add to the charm factor of Zeera, the Indian fine dining restaurant at Conrad Pune. Their latest offering is The Seven-Gredients Festival which started on the 3rd August and is on until the 17th August. Extensive research has gone into creating this unique seven-course meal.
Pavan Chennam, Executive Chef, Conrad Pune, “The menu is a twist to a place, ingredient and cooking style.” The meal commenced with Pindi Chole which was a bite-sized crunchy tapioca chip topped with a dollop of pindi chole hummus infused with Makaibari organic tea. It was a single perfect bite. Next dish was Kagzi Lemon- an avocado mousse on a bed of spicy corn kernels and tangy onion base.
Then came Pun-Ya-Paisse which was an amti consommé infused with young tamarind leaves, coconut jelly and curry leaf oil. It was like comfort food. An ideal dish to be savoured on a rainy day! Kuzhipayaram was served next which were South Indian dumplings which packed a punch of flavour. Crispy coated balls filled with a lovely duck galouti accompanied by a saunth BBQ sauce. This dish was delicious.
The next course was Lamb Bomb – a visually stunning dish of flaky filo pastry parcels of melt in the mouth laal maas. The parcels were accompanied by crunchy quinoa churma. The sweet churma worked beautifully with the savoury meat. It was hands down my favourite dish.
The main course was Brittany Lobster where a sous-vide of lobster was cooked to perfection and paired well with bajre khichdi. The crumb on the side was absolutely delectable. The initial sweetness of the kuttu atta gave way to a slight bitterness of Jakiya (Uttarakhand mustard).
The dessert is aptly named Banana where the humble banana was showcased in 3 different forms. One was a gooey caramelized halwa style base topped with a smooth phirni. Another was the crisp banana chip which provided the savoury element and the third was the creamy sorbet. The dish was like art on a plate. A fabulous end to a beautiful 7-course meal.
