#TajWithIndia We all love history, especially when it is about India’s freedom struggle. This year we are celebrating 70th year of independence and to mark the occasion, Taj Palace hotel New Delhi is celebrating it in style. The three-course menu which was served to Lord Mountbatten on 1947 at The Taj Hotel Mumbai, is being recreated to serve the guests at Hotel. Since there weren’t any vegetarian dishes in the original menu, Chefs at Taj have added some vegetarian options too.
Executive Sous Chef, Abhijit Thakre shared that there weren’t any details on the menu or recipe available and hence based on the name of the dishes, the entire menu was recreated, keeping in mind the essence and flavor of that era. You will see a lot of French names and sauces in the dishes which at that point in time, were part of the menu. The entire menu is an interpretation of the era, adds Chef Abhijit.
Consommé a l’indienne – cardamom infused spring chicken consommé was light and flavourful. Followed by Delicacies al-Hindustan or paneer tikka which was tamarind flavored.
The 1947 menu has Paupiette de Daumon Joinville which was salmon in joinville sauce and Poularde souffle Independence was three egg soufflé with chicken.
In vegetarian chef added crêpes aux épinards à l’ail, sauce au tomates garlic flavored spinach creeps with makhni gravy and feuille de curry tempéré légume rösti, sauce au curry or curry leaf-tempered vegetable fritters served with curried sauce.
We finished our meal with Vacherin de peches liberation – poached peaches with cinnamon ice cream and creme anglaise.
To mark the 70th year of freedom, Taj Hotel Palaces Resorts Safari is curating a special menu that was served on the eve of 14th August 1947 at a special price of 1947 Plus taxes.
This whole lunch was an experience in itself to relive the era of 1947. You can try the menu till 14th August.
