Cooking is all about innovation and to dread the path that seems difficult, only to realize it is simple and it doesn’t require expert culinary skills to achieve the desired results.

I have always been a big fan of roasted chicken. Most of the time I end up eating roasted legs. Then I thought it will be fun trying it out at home. I bought a full chicken along with skin and I was amazed to see the final roasted product. I will love to have this once a month and try out various variations.
Here is a simple recipe:
Whole Chicken with skin – 1kg
Cream – 250 gms( I don’t use yougurt for marination )
Thyme – 25 gms

Rosemary – 25 Gms

Garlic – 10-12 cloves
Onion  – 2 . cut them in 4 pieces
Oregano – Basil ( To be sprinkled on the marinade)
Salt and Pepper according to taste
Mushroom – 1 Packet
Olive oil
 Step 1: Truss the chicken.  Here is the link that I followed –
Trussing is important and this link helps in providing details on How to Truss a Chicken.  This isn’t cumbersome, however if you still wouldn’t like to go ahead with it – you will still get great results.
Get the chicken to room temperature before Roasting
 Step 2: Marinate the chicken for as long as you can the chicken becomes tender (At Max 16 hours).
Step 3:  Add the onion – garlic – Mushroom in the tray and marinate it with remaining ingredients
Step 4 : Put the Chicken in the tray as well
Step 5:  Cover the tray with aluminum foil on top and put in microwave in convention mode (Temperature – 180 Degree Celsius) for 20 minutes. Turn upside down the chicken and repeat ( i.e 180 Degree Celsius for 20 minutes)
Step 5: Remove foil and roast again at 180 Degree Celsius for 20 Minutes. The skin starts getting brown. Turn Upside down the Chicken and roast again at 180 Degree Celsius for 20 Minutes.

Note – If you can’t set your microwave to 180 degree Celsius …do not worry – the chicken will still get cooked – It may take a little longer. If you are setting it at more than 180 degree, you will have to turn it upside down more often to ensure that the chicken is evenly cooked.

Use a knife to check if your chicken has become tender. If not – roast it again.
